Couch to 5k in 4 weeks

I've decided that I want to take part in my first 5k. So as I was looking at different 5k events in the area, and in the time frame I wanted, I decided I wanted to take part in the Adam Towler 5k/10k memorial.

I didn't know Adam personally, but his story is really inspiring and in Laramie, things like this don't just happen everyday like some places.

I haven't registered quite yet, but plan on doing so after I get back from vacation. I will have a TON of support in Arizona. A couple of my aunts and uncle have already participated in a marathons, tri-athlons, half marathons, etc. I feel lucky to come from a family of athletic people =) I was always in shape in high school, never a runner, but always wanting to someday to a tri-athlon and get involved in the community more.

So anyways...starting tomorrow I'm going to start my training. I don't have a "schedule" but plan to walk/job/run atleast 4 days per week and week 4 only jog/run.

I've decided to go around the block. Well "the block" being 3.5 miles. We don't live in the country, we live in a mobile home community but there aren't any other streets around us really. So if I get up first thing in the morning, I can get this in to get me going for the day.
I will probably walk for 5 min to warm up and then rotate jogging and walking for the rest of the time. And when I jog I'll do it for no less than 1 min. I don't want to overdo it the first day. This will be my loop while I'm home and on vacation, I'll just play it by ear then and def do it in the mornings when its not 100 degrees out!

Sick of being sick



I'm very behind on my food/exercise log. I'm very behind on my weigh-in wednesdays as well. The last couple days I've been sick as a dog (Thanks wesley!) He just got over being sick for a week, with chest congestion and   now has an ear infection and I have a sore throat, and congestion as well as sounding like a frog. My energy is gone..I guess thats what being sick does to you. This is the first week I haven't exercised for 4 days straight and I hate it!! I have been sleeping A LOT but @ night haven't been getting much sleep @ all. I keep waking up, my throat hurting and having to blow my nose.

6 days until vacation. I pray that I get over this SOON because there is so much to do before we leave!!

Taco Bell is the ENEMY

Today I've gotten way off track. I should have kept myself busy but instead sat in front of the tv and ate. For the 1st time since I started my journey we ate junk. Taco bell. Bleh. I feel like absolute SHIT right now. At the time I was eating it I thought yummmm. But now 5 hrs later my stomach hurts, I ate wayy too much, and wish I could take it back.

PLUS I didn't exercise today which is probably another reason I feel crappy. Its been raining all day here, and I could have done a workout video and did some cleaning... our pipes were clogged and we had to have a plumber over after 7hrs of trying to fix the POS... And I was sick of seeing the kitchen floor a mess so finally by 630p the sink was fixed.

And Wesley has been sick with chest congestion so his mood has made my mood today gloomy.

AND the damn park is turning off our water tomorrow all day and so there goes doing laundry, or do any other cleaning.

So I have no idea what I'm going to do since its supposed to rain all day. Maybe I'll take Wesley to the grocery store so we can get a few things. I don't want to buy too much because we leave for vacation in 11 days and I want to make sure all the perishable food is eaten and I have to make sure the car is cleaned out before we go, and a million other things on my to do list.


Ok so I'm sure your done hearing my ramblings. I am behind on posting my food/exercise log, and forgot to write the things down in my notebook for the last couple days.


Workout videos tomorrow and healthy eating! I hate feeling like this. I think I'm going to throw up actually. My body is definitely not used to me eating this after 4 weeks of changing my eating habits.

Black Bean & Corn Quesadilla Recipe

I made these tonight, and just sort of winged it and they were amazing!!! 
These are healthy, and low in calories!




Ingredients:
  • 6 Smart & Delicious Tortillas (these were the smaller 7" tortillas) 
  • 3/4 cup corn 
  • 1/3 cup rotel 
  • 1-1/4 cups black beans
  • 1/8 cup salsa (I use the great value stuff) 
  • 1 tbsp lime juice (or fresh squeezed lemon if you have it)
  • 1/2 tsp garlic salt
  • 1/4 tsp cayenne
  • 1/2 tsp onion powder (or use 1/4 fresh onion if you like onions. We don't so I just used the powder)
  • Shredded Cheddar Cheese 3/4 cup cheese total (1/8 cup per tortilla)

Directions:

Mix everything together in a bowl EXCEPT the cheese and tortillas.

Heat up a pan with a little bit of olive oil. When pan is nice lay 1 tortilla on the pan, add 1 tbsp cheese on 1/2 the tortilla, then a few spoonfuls of the bean mixture, and then another 1 tbsp cheese on top of the bean mixture. Fold and let the tortilla get nice and brown (but don't burn it!) 

Flip carefully after a couple minutes and brown up the other side. 

The pan I used I could fit 2 tortillas at a time. To keep the finished quesadillas warm heat the oven to 170 degrees and put the finished ones on a cookie sheet and plop in the oven.

Super simple and super yummy!!

Save any leftover bean mixture for more quesadillas, or for salsa, or heat up and put on top of the quesadillas! We used all of ours!

Servings 3: (2 quesadillas each) 
350 calories (varies depending on cheese and tortillas used)
